Geelbu, Dubai, UAE RABAT, MOROCCO

It is located in a building built in 1987 in the Nad Al Sheba district of Dubai. The interior design, crafted by Kristina Zanic Consultants, cleverly blends local handicrafts with eco-friendly concepts through elements such as the Ghaf tree reception desk, camel skin sofas, and vanilla specimen chandeliers, creating a homely and intimate atmosphere. The restaurant is helmed by Chef Ionel Catau, who previously managed a Michelin-starred restaurant, and collaborates with Emirati pastry chef Sahar Al Awadhi to incorporate the unique smoky flavor of dishes using the ancient "underground cellar baking" technique. Shortly after its opening, it was included in the Dubai Michelin Guide and awarded the title of "World's Most Beautiful Restaurant 2025" by the Prix Versailles, a prestigious award under the auspices of UNESCO

Inspired by the Iconic Ghaff Tree

The lighting installation builds upon our signature "Herbarium" design concept. For Gerbou, the iconic Ghaff tree—a beloved symbol of the UAE—served as the central inspiration. Branches and leaves were carefully imprinted into molten glass to closely resemble the delicate structure of Ghaff foliage.
